Toasted Coconut White Mocha Latte with Homemade Toasted Coconut Syrup

1. **Prepare Toasted Coconut Simple Syrup:** Toast 1 cup of unsweetened shredded coconut in a pan, stirring constantly until golden brown (they burn quickly). In a saucepan, combine the toasted coconut, 1 cup of water, and 1 cup of sugar. Simmer for 7 minutes, stirring until the sugar dissolves. Let the syrup cool completely. Once cool, strain the syrup to remove the coconut solids and bottle it. Refrigerate the syrup; it will be good for two weeks.
2. **Prepare the Latte:** Drizzle the inside of a glass with white chocolate sauce. Fill the glass with ice. Add 2 tablespoons of the homemade Toasted Coconut Syrup and 3/4 cup of your milk of choice.
3. In a separate mug or espresso cup, brew 2 shots of espresso directly over 1 tablespoon of chocolate sauce. Mix the espresso and chocolate sauce well.
4. Pour the espresso and chocolate mixture over the milk and ice in the prepared glass.
5. Enjoy your Toasted Coconut White Mocha Latte!
