S'mores Cookies

Mix butter and sugars for 2 minutes. Add eggs and mix for 2 minutes. Add vanilla bean paste and mix to combine. In a separate bowl mix dry ingredients. Slowly add dry ingredients into the wet mixture and stir until just combined, avoiding overmixing. Stir in chocolate chips. Place the bowl in the freezer for 10 minutes to make the dough easier to work with. On a baking sheet, arrange graham crackers, topping each with chocolate rectangles and a marshmallow. Scoop cookie dough, roll into a ball, and flatten to cover each s'mores assembly. Bake on 350°F (175°C) for 12-13 minutes. Immediately move to a cooling rack and let cool completely before enjoying.
