Peppermint Mocha Latte with Homemade Syrup

Homemade Peppermint Mocha Syrup:

1. Combine 1 cup sugar, 1/4 cup cocoa powder, and 1.5 cups water in a saucepan.
2. Simmer for 12 minutes on a low heat, watching carefully to prevent boiling over.
3. Remove from heat and stir in 1/8 teaspoon salt and 1 teaspoon peppermint extract (adjust extract to taste, starting with 1/2 tsp if you prefer less strong flavor).
4. Cool completely.
5. Bottle the syrup and refrigerate; it's good for at least 2 weeks.

Peppermint Mocha Latte:

1. Combine 2 tablespoons of the homemade peppermint mocha syrup, 1/2 cup milk of choice, and 2 shots of espresso.
2. For an iced latte, add ice to the mixture.
3. For a hot latte, steam the milk mixture before combining with the syrup and espresso.
