Creamy French Onion Pasta

1. Melt butter in a pot and add the sliced onions. Cook until deeply caramelized (this will take some time).
2. Add garlic (to your preference) and about a teaspoon of thyme. Cook for another minute until fragrant.
3. Deglaze the pan with 1/4 cup of dry white wine, scraping up any browned bits from the bottom.
4. Stir in about a tablespoon of Worcestershire sauce and a teaspoon of parsley.
5. Add 2 heaping cups of your pasta of choice and about 1 1/4 cups of beef broth. Ensure the broth just about covers the pasta, adding more if needed throughout cooking.
6. Season with salt and pepper to taste.
7. Bring to a simmer and cook, stirring occasionally, until the pasta is almost done.
8. When the pasta is almost cooked, stir in 1/4 cup of heavy cream and about 1/3 cup of Gruyere cheese.
9. Continue cooking until the pasta is fully cooked and the sauce has thickened to your liking.
10. Serve immediately with more Gruyere cheese and fresh parsley as garnish. Enjoy!
