A customizable, cozy beef chili recipe featuring ground beef, two types of beans, and a rich tomato base, seasoned to taste and perfect for a comforting meal. Easily adaptable for stovetop or slow cooker.
1. Heat 1 tablespoon of olive oil in a large pot or Dutch oven.
2. Sauté half a chopped onion until soft.
3. Add 1 tablespoon of minced garlic and cook for about 1 minute until fragrant.
4. Add 1 pound of ground beef and brown it, breaking it apart as it cooks. Drain any excess fat.
5. Stir in 3 tablespoons of tomato paste and one chili seasoning packet. Let it cook and simmer for a couple of minutes.
6. Add 1 can of drained black beans, 1 can of pink beans (including their sauce if preferred, otherwise drain), 1 large can of crushed tomatoes, and 2 cups of broth (beef or chicken).
7. Add more seasoning to taste: garlic powder, onion powder, chili powder, paprika, and red pepper flakes.
8. Bring the chili to a simmer, then reduce heat and let it simmer for at least 20 minutes to allow flavors to meld. For a richer flavor, you can let it simmer longer or cook it in a crock pot all day.
9. Serve hot, topped with sour cream, cheese, and Fritos.
10. Enjoy!
