Chocolate Iced Peanut Butter Cookies

1. Cream butter, sugars and peanut butter together.

2. Add egg and vanilla and mix until light and fluffy, about 2 minutes.

3. Sift in flour and baking soda.

4. Mix until dough forms, avoiding over-mixing.

5. Roll dough into 1-1.5 inch balls and press down with a fork to create the crosshatch look.

6. Bake at 350°F for 12-15 minutes.

7. For icing, combine chocolate chips and vegetable oil and melt using a double boiler or microwave in 15-second intervals.

8. Spread icing on top of the cookies.

9. Optionally, add sprinkles or chopped nuts before the icing sets.

10. Serve with milk or coffee and enjoy.
